Concept

Roman-born Luca Viola and Sharon De Mayo have created with Basilico an authentic dining experience that captures the breadth of Italy's culinary tradition and its signature hospitality. In Italy, dining out is often relegated to special occasions because food is so deeply tied to home and family. Culinary Profile

Executive Chef Paul Ornstein masterfully captures the essence of Italian culinary tradition drawing from the richness of Northwest ingredients, while preserving the authenticity of Italian cuisine. Drawing from both his expertise and from family recipes that are generations old, he creates an authentic and enjoyable dining experience. This philosophy is reflected in choices such as the menu's antipasti fritti which highlight traditional Roman fried foods, such as Olive Ascolane, olives stuffed with mortadella and veal, and Fiori di zucca, delicately fried zucchini blossoms stuffed with mozzarella and anchovies.
